Traditionally made from cow's milk, Fresh Caciotta originally comes from just outside Rome.

INGREDIENTS: Pasterurised Cow's Milk, Non-Animal Rennet, Culture, Starter and salt

CHEESE TYPE: Soft cheese.

SHAPE: Flat round wheels.

TEXTURE:   Soft, closed texture and slightly moist.

FAT CONTENT: 15% Min. Fat

STORAGE: Keep refrigerated at 4oC. If care is taken this cheese may be suitable for maturing in the fridge. Wiping the form with a salt solution and turning the cheese regularly. Maturity may even be extended to a few months and the cheese becomes very hard and suitable for grating.

SHELF LIFE: Vacuum-packed for a period of four months, however once opened should be consumed, if too be consumed as a fresh product, within two weeks.

PACKAGING: Vacuum-packed wheels of approx. 2.2kg and 275g

TRANSPORTATION: Refrigerated Transportation only at 4oC maximum..
