FRESCO Ricotta is a fresh cheese, white and softly crumbly in texture, with a touch of sweetness. Ricotta
made in Australia closely resembles Ricotta Piedmontese, that is to say Ricotta originating from the region of Piedmonte in Italy. This cheese is made from whey, which contains no casein protein (this has
been left in the curd), but does contain the protein albumen, some of the milk fat, minerals and vitamins Ricotta is used in a multitude of ways, especially in cooking INGREDIENTS:
