FRESCO Ricotta is a fresh cheese, white and softly crumbly in texture, with a touch of sweetness.
Ricotta made in Australia closely resembles Ricotta Piedmontese, that is to say Ricotta originating from the region of Piedmonte in Italy.
This cheese is made from whey, which contains no casein protein (this has been left in the curd), but does contain the protein albumen, some of the milk fat, minerals and vitamins
Ricotta is used in a multitude of ways, especially in cooking

INGREDIENTS: Pasterurised Milk, Whey, Food Acid and salt

CHEESE TYPE: Fresh Cheese.

SHAPE: None

TEXTURE:  Moist, very open texture

FAT CONTENT: 10% Min. Fat

STORAGE: Keep refrigerated at 4oC

SHELF LIFE: Whilst vacuum-pack is sealed it has a shelf life of three weeks, however if the seal is broken it must be consumed within one week

PACKAGING: Vacuum-packed flat wheel, weighing approx. 2.0kg. Vacuum-packed dome shaped wheel of 250g.
