This cheese is full of surprises. Light delicate, white Ricotta is salted, shaped and then cooked a number of
times to achieve perfection in the cooking of the entire cheese rather than a partial outer crust. A crust however does develop, which can vary in colour from a yellow to a rich brown. This crust is
deliciously edible and slightly salty to the palate. The texture is closed, clour, pale yellow and there is a hint of smokiness in the aroma. Once you have tasted Baked Ricotta it usually remains a firm
favourite for many years to come!. |
