Caciotta is a simple, rural cheese, which is fresh, soft and mild. It has a closed texture and a pleasantly
milky taste, which it loses as it ages. Caciotta is pale straw yellow in colour, flat wheel in shape and a huge favourite with children. It has a very refreshing aroma and almost
reasurring taste. As it matures the flavours becomes somewhat more pronounced and it becomes increasingly yellow.
Caciotta is ideal for serving instantly or using it many recipes.

PLEASE NOTE:
If care is taken this cheese may be suitable for maturing in the fridge. Wiping the form with a salt solution and turning the cheese regularly. Maturity may even be
extended to a few months and the cheese becomes very hard and suitable for grating.
