Mascarpone is a versatile dairy product. It is a soft, fresh, vegetarian cream cheese of the palest buttercup
yellow colour. It has been a native of the Lombardy region of Italy for nearly four hundred years but is now produced in many places around the world. The distinction "cream cheese" is only half correct as
it is made from cow's milk and full pure cream but no culture or rennet is used in its creation. The result is an extremely smooth, rich, slightly sweet fresh cheese which is similar to clotted cream. You
