Fresh Pepato cheese is a simple, rural cheese, with added fresh peppercorn which add a piquant flavour. It is a subtle cheese with a soft texture. Fresh Pepato cheese has a mildly milky taste, which becomes more pronounced with ageing.
A very popular table cheese with those who dislike pungent flavours. An excellent cooking cheese for something different both in flavour and texture. As this cheese ages, its body becomes more firm.
A fabulous necessity for the refrigerator due to its vast flexibility.

PLEASE NOTE:

If care is taken this cheese may be suitable for maturing in the fridge.  Wiping the form with a salt solution and turning the cheese regularly.  Maturity may even be extended to a few months and the cheese becomes very hard and suitable for grating.
