  • 1 medium brown onion, finely diced
  • 2 tbsp garam masala paste
  • 400g tomato puree
  • 1 cup thickened cream
  • Salt, to taste
  • Fresh coriander leaves, to garnish (optional)

Instructions

  1. Begin by heating 2 tbsp olive oil in a large frying pan or skillet over medium-high heat.
  2. Add the diced Fresco Paneer to the pan in a single layer, taking care not to overcrowd it. Fry for 2-3 minutes per side, turning gently, until each cube is golden brown on the outside. Remove the paneer from the pan and set aside on a plate lined with paper towel.
  3. In the same pan, using the remaining oil, reduce the heat to medium and add the diced onion. Sauté for 4-5 minutes, stirring occasionally, until softened and translucent.
  4. Stir in the garam masala paste and cook for a further 1-2 minutes, allowing the spices to become fragrant and toast slightly in the pan.
  5. Return the golden Fresco Paneer to the pan, stirring gently to coat the cubes in the onion and spice mixture.
  6. Pour in the tomato puree and stir well to combine with the paneer and onion mixture.
  7. Reduce the heat to low-medium and add the thickened cream, stirring continuously until the sauce turns a rich, warm orange and everything is well combined.
  8. Allow the curry to gently simmer, uncovered, for 10 minutes, stirring occasionally, until the sauce has thickened slightly and the flavours have melded together.
  9. Season with salt to taste, then remove from the heat.
  10. Garnish with freshly chopped coriander, if using, and serve immediately.
